We spent my son's first birthday at Walt Disney World and will be doing the same for my daughter in a just a few weeks!
Take her to the Harmony Barber Shop. They have a 1st haircut package that includes the cut, mouse ears that say "1st Haircut" on the back, and a certificate. They will give you some of the cut hair for keepsakes as well. You can make your reservations by calling (407) WDW-DINE.
Book character dining. My favorite restaurant for the classic characters is
Chef Mickey's, but if you would like to dine with Princesses, check out

Order a special cake for her! We had a "smash cake" for my son at dinner. I was prepared with a change of clothes and lots of baby wipes to clean up the mess. Set up a private photography session for your family. My son's first birthday pictures were taken at the Animal Kingdom Lodge (no longer offered) and we have the Polynesian set up for my daughter. The mini-sessions are 20 minutes with a professional photographer and you get all of the images on a CD to take home with you.
