Yes, you are correct that bus transportation from each Walt Disney World Resort theme park runs until 2 hours after each parks daily closing hours. Additionally, the
monorail runs until an hour after the latest park closing of the day.
However, this doesn't mean you need to rush through dinner or *gasp* skip dessert in order to make it to the monorail on time. Disney's Polynesian Village Resort is a hop, skip, and jump away from the Ticket and Transportation Center. Actually more like a seven minute walk, there is an illuminated path between the two, so should you miss the monorail you can always walk over to ask for help with your best way home. The Ticket and Transportation Center also serves as a bus stop between Disney Resort Hotels, so chances are good that you'll be able to find your bus here.
Another option is you can catch a bus from the Polynesian to Disney Springs, where you can either extend your day just a bit by enjoying the late night shopping or stopping for a night cap, or just using the extra ride as pit-stop to get home. Here you can switch over to your correct bus, or because you are staying at Disney's Port Orleans French Quarter you also have the option to take a
complementary ferryboat back to your resort hotel.
Disney Springs buses usually operate until 2:00 a.m. The ferryboats also run until the wee hours of the morning, but do depend on external factors like water conditions and weather.
