    All of the dining options for Cinderella's castle are booked from 12/24-30 when we are visiting. Akershus is available but we are not planning on going to Epcot. What are the chancess there will be cancellations and slots will open up closer to our date?

    If you have your heart set on dining with the Princesses, then you may want to reconsider going to EPCOT for at least a morning or half day. You odds are better doing this than hoping to get into Cinderella's Royal Table. Although not impossible that there will be cancellations, it is highly unlikely as the week you are going is the single busiest week all year. I would definitely keep checking for cancellations, as they do happen, sometimes daily, but I would also start making an alternate plan.
