    Wow!  You sure did squeeze a lot into your question!  It took me a few minutes to figure everything out, but I think I"ve got it! 

    First, I think it's great that you have "budgeted" time to relax!  Many guests to do so much early in their trip, that by the third or fourth day, they are exhausted.  You also have some fabulous Advanced Dining Reservations.  We love the Garden Grille at Epcot (my kids are huge Chip n' Dale fans and adore "Farmer Mickey".)  Mickey's Backyard BBQ at Fort Wilderness Campground is our favorite dinner show.  I would recommend going early, and taking some time to explore "the Fort" before and/or after your dinner.  There are many fabulous activities and recreational opportunities at the resort that might interest you (horseback riding, carriage rides, fishing and the electric water pageant passes by the beach front).  Sci-Fi Dine in Theater is a fun place for lunch and the Fantasmic Dinner Package is a perfect way to enjoy a relaxing dinner and see the show without having to wait in line for a very long time.  On your last day, if you are planning on spending your morning at Magic Kingdom, I'd stick with the early Crystal Palace reservation.  This way you'll be able to have breakfast and then get the most of your final Disney day.  Finally, Downtown Disney is a wonderful choice for some evening fun.  We love Fulton's Crab House, Portobello, Bongos Cuban Cafe and Wolfgang's.  If you have young children TRex and the Rainforest Cafe are well-themed and get rave reviews from kids.  Be sure to include a visit to the World of Disney, where you can pick up just about any souvenir you are looking for to remember your trip.
