I can definitely see your concern. It will be a bit of a waiting game for you I'm afraid. There is always the chance that the park hours for September could be released a few days early, and for your sake I hope this is the case.

Here is what I would do if I were you. Once the park hours are released for August, I would plan all of those days. Try to choose the most popular restaurants on your wish list for these days since you know the schedule. This way you can get those ADRs locked in and secured. You could make tentative reservations for the first few days of September, and then check them against the park hours when they're released. If necessary, you can call back and cancel these or change them to better suit your needs once you know what to expect.
