If she absolutely wants that "Meet Cinderella" moment, then I would go with either Cinderella's Royal Table or even Cinderella's Happily Ever After Dinner at Grand Floridian (also 1 Table service). We did get to see Cinderella at the Princess Storybook Dining at Akershus when we visited in December, but the Princesses there do rotate, so I couldn't guarantee you'll get to see her when you guys visit...
