Hi there, thanks for stopping by planDisney Samantha. This trip sounds like it is going to be an awesome 3-day visit to the parks with plenty of time to rest and enjoy the entire resort.
The 
Walt Disney World Resort will provide plenty to do whether you have a visit to one of the four theme parks scheduled or not. If you do have a park day scheduled then you will want to plan to use the 
Park Hopper Option. You can only use the park hoppers on the days you are visiting a park. But I have a couple of tips on how to use your passes and enjoy all of the parks. The first day for my family usually includes a morning at 
Disney's Hollywood Studios, and hop to 
Magic Kingdom Park in the afternoon to enjoy the evening fireworks extravaganza 
Happily Ever After. On your second day I would recommend getting to 
Disney's Animal Kingdom Theme Park as early as you can and head straight to 
Kilimanjaro Safaris to start your day. The residents are always most active near sunrise and sunset. For your afternoon to evening visit
 EPCOT would be your last park to visit and is a great park to visit during the second part of your day. You may be running on empty and EPCOT has such a wonderful selection of locations to recharge and fill your stomachs back up for the rest of your day. If you go left when you enter World Showcase you will be in the Mexico Pavilion very shortly. The 
San Angel Inn Restaurante is a restaurant where you dine in a 17th century hacienda at the feet of the Mayan ruins. You should most certainly have a day or two of rest before you get back to it. That third day I would recommend your favorite two of the four parks. Or possibly a visit to the second park where you missed a couple of things.
If you have decided to stay inside of the magic at one of the many 
Disney Resort Collection Hotels the rest days always include hanging out poolside. My kids love swimming and I love laying in a recliner for most of the day. Preferably with a drink with a little umbrella or some type of fancy garnish to accompany it. Another great way to spend your time outside of the parks is 
Fantasia Gardens and Fairways Miniature Golf. Depending on how competitive a group of golfers you have the different levels are available for beginners and mini golf legends alike.
