Hi, Lisa!
If you do not have the Park Hopper option with your Walt Disney World Resort Theme Park tickets, you would not be able to dine at Epcot on the day you use your Magic Kingdom Park ticket without using your Epcot Theme Park Ticket. Any restaurant located within a Theme Park requires valid Theme Park admission.
As you purchase more ticket days as part of a multi- day ticket package, your savings amount increases dramatically. If you were to purchase a four day multi-day ticket (good for all four Theme Parks) and added the Park Hopper option, you would actually spend less money than buying one 1-day Magic Kingdom Ticket and three separate 1-day tickets for the other parks per person. Price out the different options for your family and see your savings add up! Do you know what that means? More money for Dole Whips!
Wishing you and your family a magical vacation, Lisa!
~Rachel
