I'm excited about your upcoming stay at the
Walt Disney World Resort! I'm sure your traveling party must be counting down the days until you arrive onsite and are visiting the parks. With all the new and returning experiences to each of the four theme parks, you'll have much more to look forward to on this visit. I highly recommend keeping an eye out for the golden sculptures that are part of the
Disney Fab 50 Character Collection. They include many of your favorite Disney characters and are the perfect background to take a selfie with!
Since you are considering adding the
Park Hopper Option to your tickets, I suggest doing so before you arrive onsite. The park hopper can only be added to the entire length of your tickets. Adding it on to just one day is unfortunately not an option. If you decide to wait until the last day to add it, you will still be charged for each day of your ticket and limited to only using it for one day. I would take advantage of this on the two days you were not planning on park hopping. On a recent trip, my family spent the entire day at
Disney's Hollywood Studios before heading to EPCOT for the last hour to watch the new nighttime spectacular, Harmonious. With Hollywood Studios not having a nighttime show just yet, it was the perfect way to end the day and only a short Disney Skyliner trip away.
To answer your question, even though
EPCOT may not show availability to make a park reservation for that day, there is still a good chance you will be able to park hop there starting at 2 PM. One of the only occasions I can recall where a park reached capacity and did not allow Guests to park hop, was the Magic Kingdom on the
50th Anniversary. Obviously, with that being a momentous occasion, many Guests wanted to be there to help commemorate the day. With this said, there is still a chance that the park capacity will be reached on your planned EPCOT afternoon, but the odds will most likely be in your favor.
