Hi, Ramona!  You may have heard Jiminy Cricket singing about letting your conscience be your guide.  My new mantra for itinerary planning is always let your dining be your guide.  I think with some dining reservations so difficult to obtain, your best bet is to book the meals you want, and work your theme park schedule around the meals.

You have Liberty Tree Tavern on the 12th, so I would expect you would spend the day at the Magic Kingdom.  On the 13th, you will probably want to be at EPCOT so you can enjoy your dinner at the Garden Grill.  The 15th has you at the Sci-Fi Dine In, so plan that day at Disney's Hollywood Studios.

I would say Disney's Animal Kingdom would be a good bet on the 11th, since you can see a really big chunk of the park if you arrive as soon as the park opens and have to leave early enough to make the 5:15 dinner show at the Polynesian.  Just fast pass things like the safari, Expedition Everest, and Kali River Rapids so you can avoid some of the longer lines.

Another option for you to hit Animal Kingdom is on the day you have Boma for breakfast in the morning.  Also, on the day you have Chef Mickey's breakfast, plan to go to either the Magic Kingdom or EPCOT again, as you can easily get to them from the monorail inside the Contemporary.

As for in the park itinerary, make a list of must see attractions for your family, and make sure you hit those.  Use Fast Passes again when available to minimize wait times, and with any time you have after you do your must see list, fill in with other activities.

    Have a wonderful vacation!
