Hi, Shane! You are off to a good start with knowing what parks you want to visit. When trying to figure out which days to visit each park, I would avoid the parks with early morning Extra Magic Hours unless you truly plan to be at that park 30 minutes prior to opening. Otherwise, head to another park.
Since you have the Disney Dining Plan, I strongly recommend you get online to
www.disneyworld.com or call (407)WDW-DINE to make some Advance Dining Reservations. You are going during a time when free dining is being offered, so many restaurants are going to be booked to capacity and will not accept walk-ups. To make the most of your dining plan, try to plan enough reservations to use up your 4 Table Service credits that are included in the Disney Dining Plan with your 4 night stay. Since you already know you want to visit each of the parks, make a dining reservation of each of them. After long days of walking in parks and waiting in lines, you will be glad to walk up to a podium, give your name and shortly after that be seated for a nice sit-down meal!
Suggestions: Magic Kingdom - try Liberty Tree Tavern or Crystal Palace; Epcot - Teppan Edo in Japan; Animal Kingdom - Donald's Safari Breakfast; Hollywood Studios - Sci-Fi Dine-In Theatre or 50's Prime Time Cafe. These are all family friendly restaurants that your kids will enjoy!
