The behind-the-scenes tours of the Walt Disney World parks are amazing, especially for a Disney fan. You are correct that the tours generally adhere strictly to the age requirements, though I guess it wouldn't hurt to ask if a two-day exception is possible.
If it's not, there are several other tours that she might find extra special:
The
Wild Africa Trek at Animal Kingdom may be my favorite backstage tour. You get an up-close view of the animals and a fabulous lunch on the savannah. I could do this one again and again.
I found the
World Showcase: DestiNations Discovered tour at Epcot fascinating. You learn about each of the countries in the World Showcase and get lunch in one of the table service restaurants. It's well worth the time and the money, in my opinion.
Or what about a Wishes or IllumiNations
fireworks cruise? The Wishes cruise leaves from the Contemporary and, after a water tour of Seven Seas Lagoon, anchors across from Cinderella Castle for the fireworks. The IllumiNations cruise leaves from the Yacht Club dock and parks under the bridge between the United Kingdom and France pavilions for a bird's eye view of the fireworks. Both cruises include snacks and soft drinks.
I have done each of these four and can recommend them personally. You will find others that might be appropriate on the
