I always encourage anyone to make reservations in advance, especially for those "must do" restaurants at the parks and resorts. I've visited Disney in both peak and off-seasons, but one thing is certain, the restaurants always generate good traffic. I've had friends who have "winged" it (by actually going to the restaurant and waiting for first available), and they were able to be fit in somehow, but it's a big risk. You can still cancel reservations up to 48 hours before, if you get close and realize you have other plans. At minimum, make the reservations for the restaurants you just have to sit and eat at :-)
