There are a couple of days during my stay, that I will not be going into the theme parks. However, we would still like to utilise our dining plan allocation. Where can I dine, which does not require theme park entry ?

Hi, Christina! You've got a win-win situation here: (1) Your situation is perfect for exploring the great dining options that are available at the various Disney resorts. (2) It also gives you a perfect opportunity to use the monorail.

Probably the easiest resorts with great dining to access via Disney transportation are the resorts on the monorail line. You just hop a bus to the Magic Kingdom from your resort. Then, rather than proceeding toward the park, walk just a tad further and board the monorail. This will cycle you through the Contemporary, Polynesian and Grand Floridian.

Good, one dining credit venues on the monorail line include Chef Mickeys at the Contemporary, Ohana and Kona Cafe at the Polynesian and 1900 Park Fair at the Grand Floridian.
