    Costa Maya and Cozumel's local currency is the Mexican Peso but the US Dollar is commonly accepted. In your opinion would it be fine to just bring US Dollars or should we also bring Pesos? We don't plan on buying a lot but don't want to get stuck either.

    I can honestly say that with the amount of times that I've been to Costa Maya and Cozumel, I have shopped and explored exclusively with US currency.  I'd never convert to Pesos because you will get stuck with some of it.    Besides, most (if not all) merchants in Mexico price their goods and services in US currency.

    You'll be fine.  One tip...if you're shopping for silver jewelry, don't buy in the first store that is closest to the ship.  They will typically be the most expensive.  You'll find as you go window shopping that you'll find the same designs in different stores for different prices.  Browse, remember stores and price quotes and then go back to whomever priced the lowest.
