Hello fellow Kentuckian! I am impressed that you are considering the Goofy Challenge! That is definitely on my list of things I want to do.
I think that your ability to enjoy the parks after those races will all depend on two things.
1) How well-trained and prepared you are for the race. If you have properly trained, then I think you will be fine. I do know of several of my friends who have completed the Goofy and then vacationed that week with their families. I would probably make Sunday (after the marathon) a rest day, but then I say, Go For It!
2) The second thing I think you should think about is running smart races. I think that the goal for most Goofy Challengers is to cross both finish lines in an upright position. Don't go for personal records on either race. Run a smart, relaxed race, knowing that you won't be getting your fastest times, but you will be having a great time!
For breakfast, there will be a few coffee type/snack shops open at some resorts on race mornings. Your best bet is to get on the bus early enough (I like to be on the first bus out!) to eat once you get to the starting line area. You will find EVERYTHING you need there. There are food carts there that have everything from a hot bacon and egg breakfast to bagels, fruit, and coffee.
