Hello! We are considering relying on taxis for our breakfast ADRs during our Dec. trip. I know WDW uses Mears. My ? is - do we need to call the company ourselves the night before/morning of? Or are there plenty waiting around already waiting around?

Yo, Wendy! I've never had a problem getting a cab in three minutes or less, even as early as 6:30 a.m. When you wake up and walk down to the drop off / pick up area of your resort, just ask Bell Services to call you a cab. They'll ask you where you're going and they'll call a cab (almost always within eyeshot) and you'll be good to go.
