Thanks for stopping by the Disney Parks Moms Panel! This is a popular question! Just the other day I assisted a Guest who had the same circumstances. As a mom, I totally understand the issue at hand.
Savi's Workshop is a favorite among the adults and its rule of the experience being limited to the Lightsaber Builder and one Guest can be tricky when travelling with a family of three. While I have to wait until I take my teenagers in March for the Lightsaber building experience, I had a friend in a similar situation as yours visit last month. In her experience, upon arriving, she spoke with a Cast Member and they were very accommodating with her little one, but she did mention that the experience was not sold out at the time of her reservation. I would recommend that if you decide to make a reservation, upon arrival, speak with a Cast Member. While I believe they will allow your little one to accompany you, the Cast Members will have ultimate say. Keep in mind that as a safety precaution, there may be room or experience capacity limits.

Disney's Hollywood Studios in order to join a Boarding Group to experience these attractions. Also be sure to download the
My Disney Experience App which is where you can join the Boarding Groups once you enter the park.
