Hi Brian! The dining plan can be at confusing at first but once you start to use it, it becomes much more clear. Here is how I like to think about it. In general, any meal you can make a reservation for would be considered a sit-down meal. If it's a venue (like a food court) where you walk up and order a meal combo, such as a cheeseburger and fries, that is consider a quick service meal.
In your case, if you were to enjoy a table service meal at 'Ohana, it will require one meal entitlement per person. If you were to go to a food court at your resort, you would use a quick service entitlement.
The cast members are well versed with the dining plan. If you need assistance, just ask. They will also help guide you to what you are entitled to when you are at the register for your quick service meals. And your waiter/waitress will also be able to help you when you are placing your order.
Another thing you may find helpful while at Disney - anytime you use the dining plan, the remaining credits for table service, quick service and snacks will be displayed on your receipt.
