What a great time of year to travel to Walt Disney World! You'll have mild temperatures, the extra-special feeling of a post-Thanksgiving vacation AND all of the extra magic that's sprinkled throughout the parks for the Christmas season. Great choice!
When planning our trips to WDW, I check touringplans.com, a great, unofficial crowd-predicting site, and combine recommendations with my own personal experience. Of course there are many ways to plan your trip, so if any of the particular details don't work out, simply revise as needed.
According to touringplans.com, there are only two days in your trip where crowd levels will average 5 out of 10; all of the other days will be 1, 2 or 3 out of 10. Clearly, you've chosen an ideal time to visit! As such, you can pick any park on any day, in any combination and will not be bothered by large crowds.
Park hours have not yet been released, nor have dates of Mickey's Very Merry Christmas Party, but touringplans predicts such things based on past practice. If Sunday, 12/1 offers MVMCP, that might be a spectacular way to start off your vacation, as you'll all really get into the holiday spirit right from the start. Consider taking a two-day break from the parks mid-week, as that will give you some time to revise your end-of-the-week plans, should you wish to do so.
We always plan a character breakfast for the morning after an early night. Thus, if you are planning on relaxing at your resort one night, or head back from Animal Kingdom (which typically closes earlier than the other parks), book Chef Mickey's for the next morning. Your first priority, though, should be to book dinner at Be Our Guest restaurant, which you can do at 180 days of check-in. At that time, you may make up to ten days' worth of dining reservations, so be prepared to do so.
