I happen to love wine, and I've found that most Disney Resorts Collection Hotels have a selection of wines, including sparkling wines and prosecco in their gift shops. Since you'll be staying at
Disney's Coronado Springs Resort, I recommend checking
Panchito's Gifts and Sundries first. Since you asked about prosecco specifically, which is an Italian sparkling wine, another idea is
La Bottega Italiana located inside World Showcase at EPCOT in the Italy pavilion. If you don't have your heart set on an Italian wine, Les Vins de France and Weinkeller, both also located in World Showcase are other options. Keep in mind that theme park admission is required to enter EPCOT.
I'm not sure what your plans are to celebrate your friend's birthday, but
Toledo - Tapas, Steak & Seafood is a rooftop restaurant inside Gran Destino Tower at Disney's Coronado Springs Resort and would be a great place for a celebration. Reservations are recommended but walk-up seating is sometimes available as well.
Dahlia Lounge is another option if reservations aren't available at Toledo.
