Fantasmic! and
Star Wars: A Galactic Spectacular are both amazing and I can totally understand you wanting to see both during your visit. In my opinion, if Fantasmic! begins at 8:00 p.m. and Star Wars: A Galactic Spectacular begins at 8:30 p.m., I think you're going to have a tough getting a great view of both.
The projections for Star Wars: A Galactic Spectacular are shown on the front side of the reproduction of Grauman's Chinese Theatre located at the end of Hollywood Boulevard. Having a clear view of the theatre offers the best viewing of the projections but you can see the fireworks from other areas of the park.
Fantasmic! is approximately 30 minutes long. The amphitheater is located at the end of Sunset Boulevard. It gets really congested heading up into the amphitheater and again coming out. I think you may have a hard time getting from the amphitheater and finding a good position in front of Grauman's Chinese Theatre in time for the start of Star Wars: A Galactic Spectacular. You may be able to get an okay spot to see the fireworks but if it is crowded on the night you visit, it is going to be tight to see the projections. There will be a lot of Guests who leave Fantasmic! early to try and get a good spot so be prepared for that as well.
Keep an eye on the online calendar. Performance times are always subject to change or perhaps they will add a second later performance of Fantasmic! I'll keep my fingers crossed for you but just in case, decide which one you want to see most and make that your priority.
