You've hit on one of the most effective Theme Park strategies there is: when the crowds go one way, you go the other way. Since you've enjoyed the wonderful nighttime spectaculars over and over again, it's a great idea to hit some of your favorite attractions while many people will be taking their turn viewing the evening spectacles.
The operating hours of the attractions generally follow the Theme Park hours for the day. There are some nights that Future World in Epcot may close at 7:00 p.m., so that's worth looking out for. I checked the hours for the week of your visit, and it looks like Future World's hours will match the rest of the Park. Your plan to hop aboard some attractions during the nighttime shows should work just fine.
Getting to those attractions during a parade may take some advance planning. If you're in the Magic Kingdom and would like to take in some attractions in Fantasyland or Tomorrowland in the evening, I'd plan to be on that side of the Park before the parade starts to avoid trying to cross the route. It is possible to cross at certain locations, but it's easier to just plan your day so that you're where you want to be when the parade begins. You won't have this problem at any of the other evening shows, although you may wish to steer clear of Main Street, U.S.A. crowds leading up to the Wishes Nighttime Spectacular as well.
