I am so excited you asked this question. It sounds like you are going to have a fabulous adult only trip, and I think you picked the perfect resort for your special vacation!
My first set of suggestions are fairy simple, however I think will make a world of difference. Take your time enjoying the Theme Parks. Experience different attractions and areas that you would not take the time to enjoy with your children. I find that Epcot is a fabulous place to explore, have a few drinks and taste some fabulous snacks from around the world. Taking the time to walk around the world is something I would never do with my daughter. I would also recommend to dine at some of Disney's amazing Table-Service or Signature Dining restaurants that you would not typically enjoy with your children. We are big fans of the Yachtsman Steakhouse, which is conveniently located in your Walt Disney World Resort! Take the time to head on over to Disney's Boardwalk and explore all it has to offer. Downtown Disney is also a great place to go and walk around, maybe even stop at Splitsville Luxury Lanes for a game of bowling!
Now, I'm going to give you a few suggestions to splurge on that will be sure to put your vacation over the top! My first suggestion would be to do a tour or experience geared for "adult" guests. If you are adventurous, I would suggest the
Wild Africa Trek at Disney's Animal Kingdom. There is currently a promotion offered for this tour, it is simply amazing! Another suggestion would be to book a treatment at one of Disney's fabulous spas.
