Walt Disney World is known for its amazing accommodations for those who have
special dietary considerations, including those with allergies or who are vegetarian or vegans. Whenever a guest has a special need or request, they simply need to let server or hostess know before ordering. In many cases, the chef will come from the kitchen to discuss the needs with the guest, especially if there are allergies involved.
I've seen chefs walk through buffet lines with guests to point out which items are friendly to that guest's dietary needs. And I've witnessed a chef sitting with a family to come up with a special off-menu entree for a guest.
A number of unofficial Disney blog posts mention
'Ohana as one of the top spots at Walt Disney World for vegetarians and vegans, even though the restaurant is famous for its meats. The reports I've seen mention a hummus appetizer to sub for the pork dumplings and chicken wings and a tofu/vegetable entree to supplant the meat entrees.
Though advance notice isn't strictly required, I would note on your
advanced dining reservation that your party includes three vegans. Then, you can remind the restaurant when you check in for your meal.
