If i choose not to add the dining option to my trip, would my son and I be able to share a meal at the restaurants? Also, if I choose to add the dining option, is he restricted to only the kid's menu as he will be 7 when we go?

If you choose not to add the dining option, absolutely you can share with your son, when my kids were little, I would buy only 2 meals and divide among five.  The portions were and still are pretty huge.  We would buy for example two kids pizza platters at Toy Story Pizza Planet at Hollywood Studios, and that was more than enough for them.  If however you do add the dining option, since he is a child, he will have to order from the children's menu.
