Our children will be 5 and almost 2 at the time of our trip. I'm rying to limit our late nights and was wondering which show you would recommend, Illuminations or Fantasmic? I'm just not sure we can do both.

Both are great shows, Amanda, but I understand your dilemma.

Young children will definitely see more recognizable show aspects in Fantasmic!  Many of Disney's most beloved characters take part in the show.  That said, there are some elements (a scary dream sequence that features a humongous snake and some fire) that might be frightening for the youngest viewers.  My children were never bothered by it, but I can see how some might be.  If I were you, I'd try to YouTube a video of Fantasmic! to determine whether you think it's appropriate for your little ones.

Illuminations, at Epcot, is fabulous as well, but my children (ages 4, 11, 13 and 16) definitely prefer Fantasmic!  I hope that helps.
