When my daughters were young, a stroller was key to an enjoyable day -- a place to ride, nap and carry all the extras we needed to be comfortable throughout the theme parks. There is marked stroller parking outside each attraction and restaurant. You don't lock your stroller as you might a bicycle in the city because, with so many strollers, that could be a hazard or make it difficult for others to retrieve their strollers. Cast members also need to rearrange them occasionally to make retrieval more efficient.
In many years of frequent visits to Walt Disney World, we never had an issue with losing our stroller or anything stored in it. I would just take care not to leave any valuables such as cameras or phones unattended and in plain view.

Crystal has a great tip I wish I had thought of when my girls were little: Tie a balloon to your stroller handle to make it easier to find in a sea of identical or similar styles. You can find more information about touring
