I think you will find that Walt Disney World is incredibly helpful and accommodating with food allergies. When you make any dining reservations, be sure to note the allergies on your reservation and let your server know about your restrictions when you are seated. Most of them will ask without you bringing it up.
You are always welcome to ask to speak to a chef about your needs at the table service restaurants, and many of the counter service restaurants also have someone who can offer advice.
Disney has a department dedicated to developing food options for those with allergies. For example, at the new Be Our Guest restaurant during lunch, guests order at a touch screen and can note allergies at the beginning of the order. Any items that aren't appropriate for that allergy disappear from the choices.
With such a huge operation and menus that change often, it is difficult to impossible for Disney to provide ingredient lists in advance. But it may be helpful to you to at least look at menus in advance to know what kind of dishes each restaurant serves. I often use the very thorough menu list at the unofficial site allears.net.
Please know, too, that you can bring your own food items into the theme parks. For some people with severe allergies, that is the best way to control food intake.
