I really like your plan of maximizing yet another day in the Theme Parks, and
EPCOT is a great place to end your trip. While you're there, be sure to check out my favorite new attraction,

You have a couple of options to consider for storing your bags. If your bags are on the small side, EPCOT does offer a jumbo size
locker rental (the largest size available), which is currently priced at $15 per day. Importantly, even though it is called a "jumbo" locker, the dimensions are 17" x 22" x 26" which for some Guests, might not fit a single carry on bag, let alone multiple ones. These lockers are also first-come, first-served, and thus are subject to availability. If I were you, I wouldn't risk it, but it is an option nonetheless.
I think the most straightforward option is to simply leave your bags with Bell Services at Disney's Port Orleans Resort - Riverside before you head out to EPCOT for the day. You'll simply need to take a bus or Minnie Van back to the resort to pick up your bags before heading to the airport.
Another option you might want to consider is to make a breakfast dining reservation at a Resort that is within walking distance to EPCOT for that morning. For example,
Cape May Cafe at Disney's Beach Club Resort, or the delicious new options at
Ale & Compass Restaurant at Disney's Yacht Club Resort. As a Guest dining at the Resort, you would be able to leave your bags with Bell Services at either location, and return later in the day to pick them up. You'd then leave for the airport directly from that Resort! If you haven't experienced these EPCOT area Resorts located around Crescent Lake, they are just a quick walk to and from EPCOT, where you'll use the International Gateway entrance to the park, located between the United Kingdom and France pavilions.
