Would it be cheaper to add park hopper to our tix or just buy an extra tix since we would only be visiting 2 parks one day of our stay? And can we use 2 seperate days tickets for visiting 2 seperate parks in one day? TIA

Unfortunately, it is not possible to visit two different theme parks at Walt Disney World unless you have the park hopper option on your ticket, Rhyan.  In other words, while adding an additional admission day to your tickets may be the more economical option, doing so will not allow you to enter two different parks on one day.  If you attempted to do so, the electronic scanner at the park entrance would indicate that you had already entered a different park on that day and you would be denied admission.  If you want to visit two different parks on any given day, you must do so by making use of the park hopper option.  I hope that clears things up for you.
