Hi, Rob! My kids are 10 and 7, a bit older than yours, but they have always enjoyed Epcot! Before I had kids, I never thought of it as a park that I would bring kids to, but there really is a lot to see and do!
Since you have 2 little princesses, the one thing you should do right now is book a dining reservation at Akershus Royal Banquet Hall. Here, several of the Disney Princesses will be on hand for photos and autographs. I like breakfast here the best, but you can book breakfast, lunch, or dinner at this location.
You can also dine with Chip and Dale at the Garden Grill. This is a fun dining experience in a restaurant that revolves as you dine.

This is a HUGE park so make sure you have a either a double stroller or 2 single strollers. Even your 6 year old is going to need a break in Epcot from all the walking. Plan ahead for your meals, and get to the park early and plan for an afternoon break. This park gets HOT, especially in the middle of summer, so plan for some nap and pool time back at your resort.
