Great to hear from another health and fitness professional as well as a mom of 3!
I do prefer the resorts that have fitness centers, it makes it so much easier to stay on track during vacation. The added benefit of staying at a resort that has a fitness center is that you can use it at any time. You can start early or finish late. Resorts that are on the monorail line help save some time during your day as well. Here are some of the resorts that will accomodate

I have stayed at a number of the resorts that accomodate 5 and you can't go wrong with any of them!!
Now on the flip side, I have also stayed at resorts that do not have an onsite fitness center so you have two options: you can pay for a day pass to any of the fitness centers at Walt Disney world or you can do your own workout at your resort. For instance, we once stayed at Port Orleans, Riverside and there is not fitness center there. I was able to run along the river which was awesome. I did interval training of sprints and body weight exercises. It was a fantastic workout and scenic. If you like yoga, I can't think of a better way then to set up your mat along the river and do a self guided yoga workout. If you like to run, there are a number of
jogging routes as well. There are definitely options so that you can still keep up with your fitness routine.
