How do I get from the Caribbean Hotel to the international gateway at Epcot the quickest with out having to walk thru the whole epcot park I have a restaurant I want to go to in the Japan Pavillion

Taking a taxi would be the quickest, most convenient way to get from the Caribbean Beach Resort to the International Gateway, Sheri.  Assuming you want to use Disney's complimentary transportation system, your best bet really is to take a bus to Epcot and walk through the park to the Japan pavilion.  If you're really opposed to doing that, you could take a bus from your resort to Downtown Disney.  From there, take another bus to Disney's Beach Club.  Once you arrive at the Beach Club, walk through the lobby out the rear entrance.  Swing a left once you reach the beach area.  The walk to the International Gateway from that point is five minutes or so.  Again, though, it's probably faster just to walk through Epcot and avoid having to wait for/ride two buses.  I hope that helps.
