Epcot's Candlelight Processional is absolutely beautiful, and a tradition for my family. However, it did not become a tradition until my kids were older, probably around age 9. Even with VIP seating, you will wait 30+ minutes in line, then the actual show is about 40 minutes. This is a really long time for your little ones to sit still.
My suggestion is to still go to Candlelight, but just enjoy leisurely passing by the American Gardens Theater where Candlelight is held. This way, your little ones can stay in their stroller, you can enjoy the show, but also just slowly keep walking if it gets to be too long in one location. Shows are at 5:00, 6:45, and 8:15.
