When it comes to
Disney Park Pass reservations, you want to make sure that you have availability within your tickets to add that reservation day. Since you said you can book the day before or day after, it seems like you’re okay there!
From my experience, it’s helpful to completely close out of that browser window where you’re making the reservation and close out of the app. Then start the process from the beginning. Sometimes our phones or computers need a quick refresh! Once you close out of everything, go back onto the Disney Park Pass reservations page, sign in, and see if you’re able to select that day and make the addition.
If you’re still having trouble, definitely connect with a Cast Member at the
Disney Park Tickets or
Technical and Website Support desks! They'd hopefully be able to take a look at your account and help with the process.
