Hey there Ryan,
Welcome to planDisney and thanks so much for your question! It's always a treat to get to answer questions from a fellow Arizonan!
According to number 7 on the
eTickets Terms & Conditions page, multi-day tickets must be used within 13 days after first use or by the stated expiration date, whichever occurs first, and each day of use of a ticket constitutes one full day of use.
Therefore, if you're planning a longer trip to visit sunny California and want to spread out your park visit days - you absolutely have the flexibility to do that! You can add in pool days, beach days, or days to see other local attractions and just need to use the entirety of your theme park tickets within 13 days after their first use.
My wife and I have two young kiddos, so adding in a break day or two in our trip can be very welcome - especially if we're visiting the parks for more total days. That's a lot of walking!
In the meantime, make sure to check out the
Disney Parks Blog as you continue to plan. They have some really great posts about all the fun happening around the Disneyland Resort that might help you as you try to land on exactly when to visit. For example,
Pixar Fest and
Star Wars: Season of the Force are two celebrations coming up soon that will make for a great time to visit!
Thanks again for your question, Ryan! I hope you enjoy your visit to the Happiest Place on Earth.
Have a Magical Day,
Greg
