This sounds like a very Jolly Holiday indeed! Yes, you can purchase your
Theme Park Admission Tickets now and then change both the visit dates as well as the Park Pass Reservations around a bit, all the way up until your planned Disney days. I think this is a smart planning strategy to go ahead and purchase your passes now, even if you're not 100% settled on the specific dates you'll be in the parks. There's so much to see and do in the SoCal area, I kind of don't blame you for wanting to pack in as much fun as possible!
Pro Tip: Try to confirm your plans as best as you can at least a month before your desired dates. Because each Guest also needs to also make a Park Pass Reservation, which tells Mickey and his pals which theme park you and your group are going to play in that day, last-minute reservations can become hard to find. I'd say try your best to think if and when you'll be in both
Disneyland Park and
Disney California Adventure Park at the time of purchase, but feel free to mix it up a bit if you need to.
