Do the busses/monorails run late for MVMCP? Do you have to be attending the party to use them? We are staying at POP and have an 8:00 ADR at Chef Mickey on a MVMCP night. Will we be able to use the WDW transportation to get back to POP after dinner?

WDW transportation keeps running when a park is open late for a special event.

Transportation typically runs at least one hour after park closing. Therefore, if the Magic Kingdom is closing at midnight due to the Mickey's Very Merry Christmas Party, bus and monorail transportation will be running to return guests to the parking lot (Transportation and Ticket Center) and hotels.

All guests visiting Walt Disney World are eligible to use the various modes of transport. Feel free to use the buses, boats and monorails.
After your meal at Chef Mickey's, you can walk from the Contemporary to the Magic Kingdom's bus depot. It's the fastest way to get there. Transfer to a bus back to the Pop Century. If you prefer, take the monorail from the Contemporary Resort back to the Magic Kingdom.
