Welcome to planDisney! I haven't had to buy a stroller in a few years but I have to tell you, Nick, I had a problem. My garage is still littered with at least four different strollers I bought and "thrifted" over the years to suit various needs. My favorite stroller to bring to Walt Disney World Resort was my Baby Jogger City Mini Double Stroller as I could keep so many drinks on the handlebar drink holder accessories I bought. (Its main positive attribute for me was its drink-holding capabilities. This panelist is dehydrated.) It also contained my kids in two separate areas so they didn't have to touch and inevitably fight. When I advise parents about strollers, I always tell them to bring one they know how to open and close easily, fits the
stroller size guidelines, and is comfortable for the kids.
I looked up the Burley Encore X which is the only Encore model available on their site and the size of it when opened is 33.3 x 31 x 37 inches (L x W x H). Walt Disney World Resort allows strollers smaller than 31 inches in width and 52 inches in length. This stroller fits the sizing guidelines as you stated but please make sure that the Tow bar with the hitch component is completely removed and not even a hint of it is left behind. Why, Nick?
Trailer-like objects are prohibited in the Parks. Based on the information I found it should be fine to bring into the Parks, but the final approval is given to Disney Security.
I don't know how you are traveling to the Parks but when taking a parking lot tram or
bus in the Parks, your stroller will have to be folded. There is also a chance it may not fit in the
Disney Skyliner opened
as a Cast Member on my recent trip informed me that they have had trouble with double-wide strollers fitting into them that way. The doors to the Disney Skyliner may not be wide enough to let it in. My research is showing that the Burley Encore looks a bit complex to break down with its wheel removal process and may be more of a hassle than a help. If you are planning to use any of these modes of transportation be mindful to give additional time and thought into folding this stroller. Keep this in mind for your upcoming trip so that you can have a seamless and smooth journey with your little ones!

Walt Disney World Resort rents in the Parks. My kids are older but are still small enough to need some kind of stroller on a long Park day. The stroller rentals in the Parks get the job done and are cute!
