I've had the wonderful experience of building a couple of astromech droids there, and both times, my wife and our little one, who's 3, were right there with me. We had such a blast picking out the perfect parts for our smart R-Series and our silly, lovable BB-Series droid. Now, the official rules say that the builder can bring one guest, and at least one person must be 14 or older. But from my experience, if you chat with a Cast Member ahead of time and there's space, they're usually pretty accommodating about letting the whole family join in on the fun!
If you're hoping to build two different droids anyway, and your daughter is 14 or older, I'd recommend booking both experiences at the same time so you can all enjoy it together. It'll be such a joy to compare pieces and share that special moment when you turn your droids on for the first time! If she's younger than 14 and you still want to do two droids, try to book them back-to-back so everyone can be part of both experiences.
