Hi Laura! Epcot is great to split into a couple of days because it's like two parks in one. You can use one day to explore Future World and come back to experience World Showcase! My family usually votes for Epcot during the hotter days as we are popping in and out of more shops and attractions escaping that heat. I agree with you about feeling that heat more in Animal Kingdom...makes that Safari feel even more authentic!
