Disney at Christmas should really be left to the park veterans....crowds are the largest of the year, specifically the week between Christmas and New Year, and I just can't recommend that time of the year for first-timers not to mention a youngster who might tire with lines or your mother who has mobility issues.
Because you have a child who isn't locked into a school schedule, your ability to look at other dates is an advantage I'd recommend taking. If the Christmas decorations are the draw for you, I'd consider looking at the week right after Thanksgiving. The hotels empty out from families who've spent their school's Thanksgiving breaks at the resorts and give you the best of low crowds and seasonal decorations along with festivities!
As for the best place to stay, it depends on your definition of "best." If that means cheapest, I'd go for All-Star Movies for its statues of Buzz Lightyear and Woody. If that means proximity to the Magic Kingdom, I'd recommend the Contemporary because of the ease of getting from your room onto the monorail for your mother, although she may prefer the more quiet surroundings of the Grand Floridian.
