This is a great question! I'm so glad you are planning every detail of your vacation. Your time at Walt Disney World Resort will be wonderful and the first priority is taking care of yourself while you are enjoying the magic.
You absolutely can take your own snacks into the theme parks and water parks. You will just need to watch your cooler size and keep in mind glass containers (with exception to baby food jars) are not permitted. According to the
Walt Disney World Resort Park Rules, "suitcases, coolers or backpacks, with or without wheels, larger than 24" long x 15" wide x 18" high," are not permitted. All bags are checked at security when entering the theme parks so be sure your bag is within the guidelines.
Depending on how much you plan to take into the theme parks or water parks, you might want to consider
renting a locker. You can keep a few items with you to have as needed and then make your way back to your locker to replenish your supply. This absolutely isn't required. It just might make your time in the theme parks and water parks more enjoyable if your bag has less weight to carry around throughout the day.
