You are certainly entitled to sides with your entree, and both are covered under the Dining Plan. Most of the menu entrees on Disney's website do specify selected sides to complement the main meat. There are occasions where there are extra menu sides that aren't part of any entree, if this is what you may have seen. Some restaurants will allow you to substitute a side, but this is totally at their discretion. Family-style menus sometimes categorize the meats and sides separately, but in summary, sides are covered!
