You actually can reserve accommodations at a Walt Disney World Resort Hotel right now for a 2015 vacation by calling (407) W-DISNEY (934-7639). As you noticed, you can currently check prices and book rooms through the Walt Disney World website for check-in dates up to and including Dec. 31, 2014 only. To reserve dates in 2015, you must call instead.
At this time you can only reserve a hotel room, not full vacation packages that include extras like park tickets or the Disney Dining Plan, for travel dates in the next year. However, when the rates and package details for 2015 are released (typically in August, so it will likely happen very soon), the rate you reserved will be automatically adjusted to reflect the current prices. You can also make a room-only reservation to be converted into a vacation package after next year’s rates are announced.
