Stephanie you have picked a great time to visit Walt Disney World. The spring break and Easter vacation crowds will have returned home and the weather will be warm and sunny.
To find times for events in the theme parks click on Parks at the top of the Walt Disney World main page then choose a park from the drop down menu. On the left side of the main page for each theme park is a list of options; calendar is the second choice for most parks. Once you reach the calendar click any date for a list of major event times. On April 20th for example, the Magic Kingdom has parades at 3:00 and 9:00 and fireworks are at 10:00. When you arrive at the park pick up a Times Guide for a more detailed listing of times and events.
Restaurants are found at the resorts, the theme parks, and Downtown Disney. Dinner shows, character dining, and table-service restaurants all need reservations. Planning and booking your meals can be overwhelming. Spend some time browsing restaurants under Where to Eat from the main Walt Disney World page. You can peruse under numerous categories such as theme park, character dining, type of restaurant, or resort. With the Deluxe Dining plan I recommend you try at least one character meal, a dinner show, and a spectacular meal at a unique resort restaurant. Two of my favorite resort Signature Dining choices are the Disney's Animal Kingdom Lodge's Jiko- the Cooking Place and Disney's Contemporary Resort's California Grill.
