My best advice to you is "don't wait!" Make a plan right away and
get your reservations booked. I just checked for lunch on February 27, and available choices are everything from Chefs de France in Epcot to the Crystal Palace in the Magic Kingdom (these will go quickly, so get booking!)
Your first step should be to plan out your days. Figure out what parks you are going to which day then fill in with restaurants in those locations. If you want to
send me your travel dates, I can work out an itinerary for you. Let me know if you are traveling with kids and if there are any "can't miss" parks or attractions.
If you really want to wait until you are there to book your dining, I suggest downloading the My Disney Experience app on your smartphone. You will be able look last minute at what dining locations are available. Other options are to call (407)WDW-DINE, stop by your resort concierge, or guest services inside the parks where they can check availability.
With a party of 6, booking ahead really is the way to go. This will keep everyone together on a schedule, and it is a great way to rally everyone together if your group separates for a few hours. Let me know if you want me to work out a schedule for you. Good luck!
