Disney's Caribbean Beach Resort is one of my favorite places to stay at
Walt Disney World. I've probably stayed there more times than any of the other resorts. I've also stayed there with and without children and had a fabulous time either way.
For an adults-only trip, I am going to recommend the Jamaica Village area of the resort, Teresa. It's closest to the
Disney Skyliner which will connect you over to EPCOT and Disney's Hollywood Studios. On an adult-only trip, I love spending time snacking and sipping around The World Showcase and this is the perfect location to easily access that part of EPCOT. It is, however, not located closest to Centertown and the main pool area so you'll need to take that into consideration. However, since you aren't traveling with children you might like the more quiet vibe that being away from the main pool has to offer. Jamaica village is about a 3-minute walk over to the Disney Skyliner and about a 6-10 minute walk over to the Centertown Market area. There is a quiet pool located in the Jamaica Village and laundry facilities if you need those as well. For another option, you might want to consider the Aruba section. Aruba is located closer to Disney's Riviera Resort, in fact, you can walk over there pretty quickly from this section. If you walk to their Skyliner station, you can go directly over to EPCOT pretty quickly. Also, I love the quick service offerings at Disney's Riviera Resort so it can be fun to pop over there for lunch during your trip.
Wherever you end up, Teresa, I think you'll really enjoy it. One do not miss stop when you are at Disney's Caribbean Beach Resort is
Banana Cabana. It's the pool bar and lounge located near the main pool in the Centertown Market area. The menu is fantastic. You'll find also sorts of Caribbean-inspired dishes to enjoy and specialty theme cocktails. All of the appetizers are fantastic. What we typically do is get them all and then share them for lunch. If I had to pick a favorite, it would probably be the chile con queso with Caribbean-style chili, pimento cheese, pico de Gallo and fried tortillas. Yum!
