I know how frustrating it can be to have your heart set on a particular Disney dining location and not be able to make
advanced dining reservations. But don't worry, I do think some reservations will open up between now and your vacation.
Chef Mickey's is a very popular dining location right now because it is one of the few character meals currently available. Also, the restaurant is only taking reservations until noon which does limit the number of reservations per day. Each morning, dining reservations become available for bookings at 7:00 a.m. I'd recommend checking each morning (or as much as possible) for reservation availability. You can check for a reservation time
online or by calling 407-WDW-DINE. Also, if you can be flexible about when you are wanting to dine there, trying for different times and days, you'll have a better chance at landing a spot. In my experience, the closer it gets to vacation time, the more it seems like reservations open up. People will often cancel their vacations or itineraries often change and people will let go of some of their dining reservations so as not to get charged a no-show fee. I've had the best luck about a week out from my vacation booking a popular Disney dining reservation.
If nothing at Chef Mickey's becomes available, there are a few other character meals to choose from that you may want to consider. Right now

Hollywood & Vine,
Topolino's Terrace - Flavors of the Riviera, and, of course, Chef Mickey's are all open for dining reservations. All of those restaurants are great but I do really enjoy Garden Grill Restaurant and feel like it's kind of a hidden gem. You may have some great luck landing a reservation there. Character dining does look a bit different right now but it's still so much fun. Characters are currently not visiting each individual table, instead, they are roaming the room dancing, smiling, waving and posing for pictures from afar. I've recently dined at Topolino's Terrace - Flavors of the Riviera and it was magical. I am so thrilled that dining with some of our favorite friends is back at Walt Disney World. I even got some of the best (physically distanced) selfies I've ever taken with my girl, Minnie Mouse.
